
This fall, as we setup camp in one of our favorite spots in Colorado, we turned to one of our favorite campfire recipes as we toasted to new memories with great friends - Wild Game Sausage and Peppers. Throughout the years, traditions passed under fire light have taught us how to master many of the recipes we feature on the Over + Under Journal like Mark's Famous Breakfast Sandwich. In this journal we are excited to share one of our campfire favorite, wild game sausage and peppers. One of the most simple yet delicious recipes we always take with us on the road. All you need is a trusty cast iron and your Folding Buck knife and you can create a delicious and filling meal within minutes.

4 wild game sausages, preferably homemade
3/4 stick of butter
3 or 4 medium bell peppers, a mix of red and yellow, sliced into 1/4-inch strips
2 medium red onions, sliced into 1/4-inch half-moons
salt and pepper to taste
2 garlic cloves, minced
1 tablespoon red wine vinegar
chopped parsley for garnish
