With Mother's Day just a week away, we've been racking our brains trying to figure out a foolproof plan to make it a special one.We've put together a classic recipe as a delicious and simple way to say thank you to any special women in your life.
What better way to start the day off than with delicious Blueberry Pancakes? Grab the kids to make a beautiful Breakfast in Bed or surprise that your mom by cooking up a The Perfect Mother’s Day Brunch.
3 1/2 cups all purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 cup sugar
1 stick butter or margarine, melted and cooled
1 cup fresh or thawed and drained frozen blueberries (about 8 per pancake)
First things first, you'll need to gather your ingredients and set aside a large sized bowl and a medium sized bowl. In the larger bowl, combine the flour, sugar, baking powder, and salt to blend. In the medium sized bowl, lightly beat the eggs and whisk them into the larger bowl. Now combine combine the butter with a cup of milk in the medium sized bowl gradually whisking them into the flour mixture in the larger bowl.
Special Tip: When whisking the buttermilk mixture in with the flour mixture avoid over mixing. Small lumps may remain.
Heat cast iron skillet or a seasoned griddle over medium heat. If you choose not to season the pan, then brush the pan lightly with oil to prevent the pancakes from sticking. Now for the hard part, pour batter in batches, approximately the tablespoons each. Make sure to leave about an inch of space around the pancakes and add a handful of blueberries. Cook about 2 minutes until bubbles form on the top and the bottoms are golden, then turning the pancakes over for a few more minutes.
Special Tip: Don't forget to include Mom's favorite flowers in a glass vase for that finishing touch.
